For the same reason that many foods taste better after they're cooked.
Fire makes things better so you should use it often. Except in cases when it doesn't. In which case for the love of god don't.

...but bread is already cooked. O.o Toasted bread is cooked food that's been cooked again One could argue that bread is simply undercooked toast. Think about it, how many uses does bread have that cant be made better by turning it into toast? Only if 1. They belong to... an Addax, Antelope, Bison, Cow, Deer, Gazelle, Giraffe, Goat, Ibex or Sheep. And 2. They are prepared right.

Think about it, how many uses does bread have that cant be made better by turning it into toast? you could freeze it and then eat it! frozen bread is always yummy! =D i don't think toasted frozen bread would be very good, though. what? <_<
