Is it better to upgrade the tools as you go, or wait until you've maxed it out and do all the upgrades at once?

You could at least upgrade the watering can and hoe in stages to help with crops. The ax and hammer could be done in stages to help clear the field, of the stumps and blouders.

The Watering Can is the easiest. IF you water regualarly, by WInter Year 1, it should be ready for Mystrile. THe others may be a little harder and the hardest, the Fishing Rod.
When it comes to upgrading to Mythic, go for the Fishing Rod first and the Axe last. Why? The Fishing Rod is your best friend when it comes to Mythic. The Mythic Axe does the same as the Blessed Axe, except takes 50% less Stamina, so you can survive.
Here's a helpful Mythic order:
1. Fishing Rod- Able to catch Pirate Treasures and Fish Fossils. 2. Watering Can- Really helpful to be able to water 252 squares at once! 3. Hoe- proves invaluable in Spring to till major portions of the field in one hit. 4. Sickle- helps get a great reach to get down dead plants, but is downsided by the fact it's a Spin Attack. 5. Hammer- if you want that Truffle, wait to have a Mythic Hammer. Using a Cursed/Blessed Hammer is just not worth. 6. Axe- reason given above.

That's very useful N2G. I think the only Mythic Tool I have is my Fishing Rod. My sprites are pretty well-trained at watering, so I have them do that.

All my Sprites have full experience at Watering and Harvesting, yet, during Fall, they cannot do both in a single day, so you have to help the watering side, since a Sprite won't water an area if the crop can be harvested.

That's odd. In my current game where I married Ann. I have just 2 to 3 sprites water the 48 bags of crops, and have 2 sprites to harvest. All of the sprites are fully experienced at watering and harvesting.

You have 48 bags, I use around 75.

Also waiting to winter first to upgrade means you should have made a load of money from the sweet potatoes in fall.
